Roasted Harvest Cabbage on Whipped Smoked Tofu

 

This is our CEO Miki’s personal favourite fall recipe. As summer comes to an end and fall feathers in, roasted cabbage with oomé whipped tofu is the perfect way to an easy and healthy meal! We personally love pairing this with rice. 

For us, this is the best of both worlds - making for the best Asian fusion meal! What toppings would you put on?  

Makes approx. 6 servings

What you'll need:


Blender


Ingredients:


1 block oomé Maple Soy smoked tofu
1 med cabbage
1 tbsp avocado oil
1 tbsp sesame oil
1 pinch of salt
½ tsp miso
1 tbsp tahini
1 tbsp rice wine vinegar 

Instructions:

1. Preheat oven to 400F.
2. Slice entire cabbage into approximately 6 wedges;
3. Drizzle cabbage in avocado oil, season with salt, and pepper. Place on a roasting pan and bake until charred and braised (approx 30mins, rotating and flipping halfway through);
4. Place smoked tofu, miso, tahini, rice wine vinegar, sesame oil, and water in a blender and blend until creamy and smooth;
5. Remove your roasted cabbage;
6. Take your creamy smoked tofu spread and generously spread on the serving platter. Plate the roasted cabbage on top of the creamy spread in the design of your choice;

7. Garnish and drizzle with chili oil and seasonal nuts for an extra zing!
