I have fond memories, as a child, eating onigiri. These are easy to prepare for anytime and great for an on-the-go meal, made tastier with our smoked tofu!

What you'll need:
Cheese grater
Onigiri mold
Ingredients
1.5 cups cooked sushi rice
1 block of oomé maple soy smoked tofu
1 tbsp each sriracha and mayonnaise
2 sheets dry roasted seaweed, cut in half (for a total of 4 strips)
Sesame seeds (optional)
Instructions:
1. Using a microplane grater, grate 6 tbsp of tofu;
2. Mix grated tofu, sriracha and mayonnaise together;
3. Place enough rice in the onigiri mold to cover bottom of mold and a well in the middle;
4. Scoop 1.5 tbsps tofu mixture into the well;
5. Add equal amount of rice to cover filling and place mold on top, press mold to form onigiri in place;
6. Remove onigiri, sprinkle sesame seeds around and wrap with seaweed.
7. Repeat with the remainder of rice.
